When the cumin seeds start crackling, add ginger-garlic paste and finely chopped onion to the pan and sauté. When the onion becomes soft, add finely chopped tomatoes and cook while stirring. Mash the onion and tomato well while cooking. After this, slow down the flame of the gas and add turmeric, garam masala, and red chili powder, a little salt, and sauté. After this, turn off the gas and take out the mixture in a bowl and let it cool.

Meanwhile, put wheat flour in a large mixing bowl. Add celery, coriander leaves, and a pinch of salt to the flour and mix. After this, add the prepared tomato mixture to the flour, mix and knead the dough. Now keep a non-stick pan/tawa on the gas to heat. Now break a dough ball and roll a thick paratha from it. After rolling the paratha, put it on the hot pan and cook for some time. Cook the paratha until it becomes golden and crispy from both sides. After this, take it out in a plate.
